Where to buy absinthe in Amsterdam (and what to know first)

Few drinks come with as much mythology as absinthe — the "green fairy" that supposedly drove 19th-century artists to visions and madness. The reality is more interesting and a lot less dramatic. Here's what's actually true, how to drink it properly, and where to pick up a bottle in Amsterdam.

What absinthe really is

Absinthe is a high-proof, anise-forward spirit flavoured with botanicals — chiefly grand wormwood, green anise and fennel, the "holy trinity." That's where the herbal punch and the classic green colour come from. It belongs to the same anise family as ouzo, raki, sambuca and pastis, just bolder and usually stronger.

The myth, briefly debunked

The legend says a compound called thujone (from wormwood) makes you hallucinate. Modern testing shows vintage absinthe contained far less thujone than the stories claimed, and today's bottles are well within safe, regulated limits. What absinthe will do is get you tipsy quickly — it's often 55–75% ABV. The "visions" were mostly very strong alcohol plus a great story.

How to drink it properly

You don't shoot it, and you (please) don't set it on fire — the flaming-sugar trick is a modern bar gimmick that mostly ruins the flavour. The traditional French ritual is simple and worth it:

  • Pour a measure of absinthe into a glass.
  • Rest a slotted spoon with a sugar cube on the rim.
  • Slowly drip ice-cold water over the sugar — about 3 to 5 parts water to 1 part absinthe.
  • Watch it turn cloudy. That milky transformation is the "louche," as the botanical oils come out of solution. Sip and enjoy.
Cold water and patience — that's the whole secret.

What to look for in a bottle

Real absinthe gets its colour and flavour from actual botanicals, not just dye and sugar. A genuine bottle will louche when you add water; cheap, artificially coloured "absinth" often won't. If you're unsure, ask — we're happy to point you to the real thing versus the party-store stuff.
